Gluten Free Chicken Pot Pie! We did it! I wasn’t sure if these mini pot pies (the size of big muffins) would be a goopy mess or seamlessly come out of the pan still intact. Honestly I can’t believe they turned out this good on our first attempt. Cooking and baking gluten free isn’t always easy.

Carmen and I both have Hashimoto’s Disease, which is an autoimmune disease where your body attacks your thyroid. I’ve had this all of my life, but just diagnosed in 2017. My thyroid is done. It will never function properly so I will take medicine forever. I’m actually fine with it. I’m thrilled to have an answer because I’ve known for decades something wasn’t right. Feeling that horrible constantly couldn’t be normal.

Carmen can control hers now without needing meds just by her nutritional intake. Gluten isn’t good for us, neither is soy. Gluten protein mimics thyroid hormone and causes even more of an attack on our thyroid.

Sometimes Carmen feels bummed out because she can’t just eat whatever…she has to be super cognizant of what she eats because the side effects can be uncomfortable at best and painful at worst.

She loves to cook, so I decided to show her that she can enjoy all of her comfort foods. There’s a gluten free version of all of her favorites if we make them homemade. Today was our first attempt at GF Chicken Pot Pie…& they turned out pretty damn good.
