Gluten Free Chocolate Chip Muffins

If you read my last post about GF Chicken Pot Pie, you’ll remember that my oldest daughter and I stay away from gluten because it flares up our autoimmune disease. Today is baby Ruby’s first birthday, and I wanted to make something special besides the usual eggs and turkey bacon with fruit for breakfast.

I came across this recipe from Gluten Free Girl for GF muffins, and I added the chocolate chips. In an effort to cut sugar, I used stevia in place for 1/2 of the sugar the recipe called for. I think I should have stuck with using regular sugar because they’re not quite sweet enough.

Nonetheless, they were a BIG success with the kids! I’m really getting into this gluten free baking thing.

 

Tip: I always like to use cool baking cups like the picture below (click the pic to follow the link). A pop of color or shine adds interest and it makes my kids more willing to try to new things if the overall package looks fun.
